I never succeed getting a good loaf.

I can only get wholemeal flour.

any recipes with tips?

I haven't baked with Einkorn so no recipe, but from what I understand it is lower in gluten than conventional AP flour.

Flours like that (Spelt, Kamut have similarly weaker gluten structures) need to kneaded much more gently, so that the gluten bonds don't break- resulting in a flat loaf.

Are you baking in a loaf pan?
