I defrosted chicken today for dinner and after breading it for shnitzel I found out that we didn't need it tonight. Can I leave the breaded cutlets in the fridge for tomorrow? Or should I put it back in the freezer overnight?

Yes. Do not re-freeze. It should be just fine.

Thank you! I usually use defrosted meat/chicken that day so I've never done this before.
