Shalva is so much easier for Anglos to pronounce. I'd say if you don't live in Israel, you should use Shalva just for that reason. If you do live in Israel, I'd chose Shalva because it is more trendy (Menucha is more outdated, Shalvas are young).
I'd imagine the nickname should be Shalvi.

Shalva reminds me of an Israeli cereal. Also there's an organization called shalva for kids with special needs.
I wouldn't use either

I'm not looking so much for a nickname for her to go by as much I just want a cutesy at home only nickname

I would pick shalva over menucha because it is cuter and sounds trendier. Menucha is more of an old fashioned name, but the few menuchas thwt I know are all very special individuals.

I’ve always loved the name Menucha. It has such a pretty ring to it and all the Menuchas I know are cute and smart;)
Such a beautiful meaning too.
I know a Menuchi, and thought it fit her well- though I like the name even without a nickname.
If it’s just an at home nickname, I wouldn’t worry, they tend to come naturally and don’t always make sense lol. Like how the kid on top pronounces the baby’s name and then it sticks for the family!

Don't worry about a nickname - nicknames are not usually chosen in advance, they just develop.

Shalva is a lovely name. I would definitely choose it over Menucha.
