I’m looking for board games that an elderly woman can play by herself on long shabbos afternoons.
Any suggestions?

What does she like?
Some complex games have single player versions.
Terraforming Mars for example. Instead of competing against another person for points you try to meet the milestones before a certain time frame. This one will take a while plus there are expansions to make it different. New maps etc.
Castles of Burgundy has a 1 player option but never played that version as I am not a big fan of that game to begin with.
Does she like puzzles? There are a number of brain puzzle solo games out there. Rush hour, chocolate fix... too many to count.

Does she have good coordination?.
Rush hour
Tricky fingers
Those puzzles that you need to figure out how to separate 2 pieces
Spot it
Rummy can be enjoyable alone I think
Are jigsaw puzzles allowed? Even a simple one like a large size 48 piece can be enjoyable
