Food for Friday night meal?
Food for daytime meal? Something you want to warm up shabbos morning or want to keep hot all night?

Friday night food gets put onto a plata before shabbos. Each sealed pan of food is placed in another pan of water, like a double boiler, so the food doesn't burn.
For overnight cooking, only cholent, rice stew or shredded potato stew works without burning the food. In a slow cooker.
For food that needs to be warmed morning annon morning, wrap in foil (not in a pan- takes too long to warm up) and place on top of hot cockpot from morning until meal.

We do pots only. My soup would cook too wild in disposable pan.
I put kugel on top of overturned pan or ontop of soup or meat in water bath as Ra mom said above.
Chulent in crock pot or on plata. We don't do meat often, we are full after the soup. We often add extra meat to chulent and take off a small piece Friday night.
Blech works the same. There you can put the pans further from heat source and you should be fine.
Oven on 250 on auto shut off also works. Calculate how much time you need for Davening thru first course.
