What does she like?
Some complex games have single player versions.
Terraforming Mars for example. Instead of competing against another person for points you try to meet the milestones before a certain time frame. This one will take a while plus there are expansions to make it different. New maps etc.
Castles of Burgundy has a 1 player option but never played that version as I am not a big fan of that game to begin with.
Does she like puzzles? There are a number of brain puzzle solo games out there. Rush hour, chocolate fix... too many to count.

Spot it
Rummy can be enjoyable alone I think
Are jigsaw puzzles allowed? Even a simple one like a large size 48 piece can be enjoyable
