I’ve found chicken bottoms with rice or potatoes and tomato cucumber salad to be most cost effective. It’s filling and no one is really noshing the rest of the night. A lighter supper is homemade pizza tuna patty ceasar salad or vegetable soup. That’s not as filling and I find everyone starts noshing again few hours after we ate. We are a mix of a family from toddlers to older teens.

- tomato soup with rice and eggs
-fried tofu with Szechuan or soy sauce, ramen noodles and vegetables (peppers, onion, broccoli, etc)

I do lots of chili and stews, anything that stretches the protein with veggies and (ideally) another protein like beans. I can feed our family of 4 2x on a huge chili that has only 1lb of meat. Even with the cost of ground beef (and everything) higher than it used to be these weee super cheap dinners.this week I made a middle Eastern inspired ground beef/beans (chick peas and black beans) and rice that will easily feed us twice as well, again, using just 1lb of ground beef (that I bought on sale as a family pack months back and separated into lb portions)
