I have an extra tub of cottage cheese Im trying to use up. Anyone have a recipe for cheese latkes using cottage cheese?

1 pound cottage cheese
6 eggs
1/2 cup sugar
pinch of salt
1/2 teaspoon cinnamon
1/2 teaspoon vanilla sugar
1 cup flour
