Things to freeze

I'm hoping to have Shabbos guests for the next few Shabbosim and want to put a few more things in the freezer, I work full time and don't want to feel pinched for time.

I currently have a nice supply of
Chicken soup
Kneidels
Blondies
Challah
Challah kugel
Deli roll
Meat spring rolls

I also have a meat pie and some knishes.

I will make chicken fresh, also gefilte fish, Cholent, schnitzel. Potato kugel most likely fresh too.

Any other things I can freeze besides cake/cookies?

Potato kugel
Lukshen kugel
Cabbage and noodles
Kishka
Meat pizza
Apple cranberry kugel
Strawberry sorbet

I freeze techina, lukshen for the soup, blueberry pie, apple crumble, cheesecake (for Shabbs breakfast)

I would prepare some things and freeze mid-way, so it's not such a big deal, and doesn't make as much mess, when you cook the items fresh.

Season and bread the schnitzel, clean and season/sauce the chicken so its ready to bake. Soak and freeze the beans. Portion out the barley and seasoning in baggies.

I freeze gefiltr fish. I don't think it makes a difference fresh or frozen.

I freeze ready-assembled apple kugels and other fruit pies raw. On Friday I stick it into the oven and we enjoy it fresh.

I make my dips fresh weekly but I know people who freeze dips like tomato dip.

Noodles defrost well? In my experience they get wet and mushy. Also have frozen lukshen kugel and found the texture to be papery.

What meals will you be serving and for who? I would make a list of the meals so that you have more of a sense of exactly how much food you will need and then construct an easy menu with stuff that can be made ahead and frozen.

Any kind of braised meat freezes well so you can cook and then freeze. Most braises are actually better the next day anyway.

Here are notes for a brisket recipe I have

MAKE AHEAD: The brisket can be made up to 3 days ahead of time and refrigerated. Reheat the brisket in a 300°F [150°C] oven until hot, about 45 minutes. Brisket also freezes well for up to 2 months; just be sure to defrost in the refrigerator 2 days ahead of time.

There are chicken recipes that have you marinate the chicken in a freezer bag and then just defrost and cook when read to cook.

I have a recipe for “pomegranate-glazed chicken with wild rice that can be frozen for up to two months. It's very easy it is essentially pomegranate juice with some pantry items as the marinade and the basting liquid.

Im talking young couples with children under age 6.

Not looking for fancy, I rarely do meat, though I've been experimenting with shredded meat from London broils (therefore, pie and rolls).

Baked fruit is not a sell around here.

Chopped meat dishes freeze well, (already baked) chicken doesn’t. Roasts freeze well. Noodle kugels too.

Freeze beans? Why? How long does it take to make fresh?

It's nice to soak 4 weeks of beans at a time, drain, rinse and then know it's ready portioned out in the freezer.
