I actually highly recommend visiting the Grand Canyon in January. It's far less crowded, there's more opportunities to see the wildlife and it is absolutely beautiful with snow. Just bring warm clothes and drive carefully. I'd suggest a minimum of two days / one night (so you get at least one sunrise and one sunset).
If there is a snowstorm, just wait inside the Desert View Watchtower on the east end or in the Yavapai Geology Museum on the west end, both of which have large windows to view the canyon as the storms pass through. Seeing the canyon reveal itself after a snowstorm is possibly one of the most magical sights you'll ever see.
