Challa doesnt get big in oven after rising fine..

Exactly that really. Challa dough grows fine over the bowl, but once plaited it doesnt rise much in the oven why?? Should the setting be different? Oven too hot?
All advice welcome...

I let my challah rise for another 30 min after braiding

After braiding let it rise in the counter for another 45 minutes.

I would say 45min max or you’ll start to lose the braided look

You can lightly poke it after 45 minutes to see if it’s risen enough. If it springs back slowly, leaving a small indentation, that means it’s ready to go in the oven.

You can look this up, you can use this to test your dough throughout the process. It’ll react to a poke differently depending on what stage your dough is in

I put it into the oven on 250 for 10-15 minutes and then up the temperature

You should put the challah in a cold oven and only then open the oven temp. That way as the oven heats up the challahs rise.

Don't preheat at all

I also put the braided loaves in the oven set to 200 for about 10 minutes before baking.
