How important is it to have an oven hood?
I fry once a year.
Does ducted or ductless make a difference?

I assume you mean a hood over the cooktop/stove since most ovens aren't vented.
Even if you don't fry, when you cook anything there is a combination of steam/vapor plus cooking particles/effluent that go into the air and land on surfaces in your kitchen and perhaps elsewhere depending on the layout of your home.
Many jurisdictions require a hood in order to pass Code.
That said, not all hoods are created equal
There are hoods that recirculate and these aren't particularly effective but I guess better than nothing.
Because of space, many kitchens have the microwave/combination hood over the stove. These are a step up but still not the most effective hoods. However, the reality is that for many people they are the most efficient use of space and so it is a compromise and are probably fine for your purposes
There are downdraft vending systems for kitchens which have no ability to have an overhead hood for some reason. These are not efficient because heat rises and so a down draft is fighting nature.
