Why parsnip? Is it for the taste or because you happen to like that vegetable? I always wondered

What's the recipe? I'm wary of parsnip because I find it too sweet

Chicken soup is very basic. There aren’t many secret ingredients.

I use the recipe on kosher.com called "award winning chicken soup". I gave the recipe to my sister and her husband loves it too. Sometimes I use bones instead of only chicken bottoms

I can give you my exact recipe and method. My family loves it.

Fill an 8 qt pot 3/4 with water, add 3-4 tbsp salt and some pepper and bring to a boil.
When it boils, add 1 package chicken bones(in a wrap n boil bag) and 4 chicken bottoms.
Let cook on high flame for 1 hour. Then remove bottoms. (1 hour is enough for all the fat to go into soup, and short enough time not to get the soup "dirty". And removing it gives you more space for the veggies.)
Then add the vegetables:

1 onion
Small knob celery
2-3 petrishka
1 parsnip
2 celery sticks
Small piece sweet potato
Half a green pepper
5-6 cloves garlic
1-2 squash
5 medium-large carrots (not cello carrots!)
All of these go into a wrap n boil bag except the ones that you like to serve with the soup.
Cook on low flame with a closed lid for 12-16 hours. I always do it overnight.
Let cool and squeeze the two wrap n boil bags to get all the liquid from there.
Enjoy!
