I once was a guest at someone’s house and they cooked cubed potatoes with the Gefilte fish. They were all eating little potato pieces when they ate fish.
Why not dips? Which dips are you bored of? I LOVE challah with different dips. I was reading this thread for other ideas because I’m gaining so much weight from all the extra challah with dips! Bored? No way… it’s the best part of the shabbos meal!
When I was a kid we just ate fish with Chrain and that’s it .
My kids don’t eat fish so they busy themselves with dips, hot peppers and pickles.

We usually make on Yom Tov something similar, sauté carrots, squash and potatoes with some onion, then the our over it ketchup (or tomato sauce) and add the fish (there’s also spices and possibly sugar) it’s actually delicious and if you x want more starch you can omit the potatoes.

I've never tried ceviche just because I'm not do into trying foods that are foreign to me, but it's very popular where I live (south America), people make all kinds of variety and serve on trays with sweet potato and plantain chips

Sushi

Salmon salad plated- mix lettuce and cucumber half slices and dress lightly with lemon, salt and pepper, put some on each plate.
Bake salmon cut in cubes coated with bbq sauce. Put a few pieces on top of each salad (or do the same but don't plate it)
