One of the magazines had a sweet potato recipe a few weeks ago. It was either Family First or Binah. I think. If anyone has the recipe please share it. Thanks.

From Binah Nov 7, '22
Sweet potato kugel
Note from recipe creator: double for a 9x13 and increase baking time
6 servings
3 eggs
1/2 cup oil
1.5 tsp salt
A few shakes black pepper (?)
2.5 lb sweet potatoes, peeled
1 onion, peeled
Preheat oven to 375F
In a large bowl, combine the eggs, oil, salt, and pepper.
Using a flour processor fitted with the kugel blade (or fine grating blade), grate the potatoes and onion. Combine the grated potato mixture with the egg mixture.
Pour the batter into a (greased?) 6.5" x 9" (5lb) loaf pan
Bake at 375F for 2 hours

I can't do onions that haven't been sautéed first, and it seems that the onion is a major component to this kugel.
If anyone here has made this, do you think it would work without the onion? If not, any ideas for a benign substitute?

Can you use dehydrated minced onions?

Good question, I don't think I can use them and I hesitate to try since I'm pretty much the only one in my family who would eat this kugel...

Thanks. I've tried that with regular potato kugel and surprisingly didn't care for it. Maybe it'll work better with the sweet potatoes...

Hamodia had a recipe years ago for sweet potato kugel, with mushrooms and sauteed onions. I still make it. It's really good, the onions add a lot.

What do you mean ‘I can’t do onions’ ?
I don’t think it would work without the onions.
But what about trying the frozen cubed fried onions?

I seem to have a sensitivity to the water soluble sulfide (?) compounds that get released from onions when they're cooked raw in a water based food (like eating a chicken soup that was cooked with a raw whole onion, meat cooked on top of a bed of sliced raw onions, potato kugel with raw grated onions in the batter, etc.)
If I don't overdue it I can handle foods with a minimum amount of sautéed onions. But they need to be fully sautéed (so when a soup recipe says "cook onions just until softened" I let them continue cooking until they're a medium or darker shade of brown). From a taste perspective, I didn't like what sautéed onions added to a regular potato kugel.

I have. Sometimes they bother me, sometimes they don't.
The canned ones definitely bother me.

Nope. Not scallions either. I think it's caused by the same compounds that make your eyes tear when cutting onions.

Such an interesting combo of sweet potatoes and onions.
How many round 9in pans would it fill?
