How many people are you having? What's your budget?
Easiest is obviously to get it catered...
Edit: Oops misread it as chanuka party menu. OP, are you looking for regular family dinner food, or a party menu?

Fried chicken or sesame chicken
Rice
Green beans
Fresh salad
Donuts for dessert
Or you can make a burger bar and do latkes instead of a bun

Same as any other menu just swap whatever starch you normally would make (rice, pasta, potatoes, whatever) with latkes. No need to reinvent the wheel.
