My kids like otrio, othello, cubu, and tantrix. Otrio and tantrix can be played with 2-4 players. Cubu is 2+ players, not sure the limit.
We also do classics like backgammon, chess, and checkers.

For quick strategy games for 2 players there's this company Gigamic that has a bunch of wooden games, very visual-spatial-thinking-strategy type and I think all or most 2-players. Quoridor, Quarto, I don't remember what else but I'm sure I've seen them around.

Oh and Patchwork! We are really enjoying that. 2 players, not too long, you have to lay out all the pieces on the table but they can go any which way so I wouldn't call that a long setup.

Not a board game, maybe quicker than what you are looking for but Mancala is always fun if looking for something that can be played quickly without sophisticated setup...

Onitama.
It's a spatial strategy game with only ten moving pieces on the board. It's very heavy on strategy over luck. That means the people in the family who are "chess types" like it. But there's enough unpredictability that you can't calculate strategy more than three or so moves into the future. That means that the rest of us (who don't like to think THAT intensely) still are competitive. It's also short: 5-15 minutes.
Don't get the expansions. The game is beautifully simple as it is.
