Looking for something to replace the ham that all the non kosher recipes have for rice and beans. What would be an easy substitute?

We do ground beef, sometimes rib meat. You just have to saute the meat first, before adding the beans.

You can use smoked meats or if vegetarian, use smoked soy sausage.

Interesting...I never do meat. I always serve rice topped with beans cooked with salsa and then melted shredded cheese. so yummy!

There are so many recipes for a dish that has rice and beans. Most of the recipes don't use ham as a flavoring. For example, Mexican rice and beans is a classic and it doesn't use meat at all but only Mexican herbs and spices. Refried beans traditionally were made with lard but even Mexicans don't use lard for the most part because of health concerns - they use regular oil.
There are a few dishes that use rice as a main component that might use ham but you can always sub smoked turkey leg or equivalent. Jambalaya doesn't have beans but typically uses ham.

I just do rice and beans.
Sautéed onion and some crushed garlic
Add drained can of red kidney beans
Add can of water
Squirt of ketchup or 1 tsp Tomatoe paste
2 bay leaves
Bring to a boil , lower flame and let simmer until sauce thickens a bit and water reduces considerably. Remove bay leaves. Serve over cooked rice (seasoned with salt and pepper)
