I made a corned beef last night, had it in the fridge overnight and my husband sliced it for me
In the morning and it’s very tough. My 6 year old was very excited and wanted some for breakfast and after two bites told me mommy it’s supposed to soft…:
What can I do to soften it. Boiling the sliced pieces feels wrong. I still need to bake it at 350 for 30 minutes with the sauce. Should I bake it low
And slow instead? 250 for 2 hrs or something like that?

I would bake it in the sauce, fully covered, at 300 for at least an hour plus. 250 for 2 hours might be better though. I feel like there are better experts here who will hopefully advise.
I do love that you let your 6yo break into it for breakfast. You sound like a sweet and fun mom.
