Water Challah not sweet

Hi, looking for a water challah recipe that isn't sweet. Preferably fluffy inside and crusty outside.

This usually makes about 3-4 challahs

2 c water
4 T oil
2/3 c sugar
2 t salt
6 c flour
2 T yeast

Activate the yeast in one of the cups of water (warm with a little bit of sugar)
Combine all ingredients
Let rise for 1 hr, punch down
Shape and let rise for an additional hr
Bake for 39 min

I don’t find that 2/3 cup of sugar makes it too sweet but you can do 4 tablespoons instead

My recipe has less sugar.
But it's not very fluffy.

6 C water
4 Tbsp yeast
1/2 C oil
3/4 C sugar (or honey)
2.5 Tbsp salt
About 6 pounds flour

Here's mine:

5 lbs of flour minus 1 cup
4.5 c warm water
1.5 cups sugar
4.5T dry active yeast (proof in well in flour with sugar/water)
1 C oil
1.5 T salt (sometimes I do a bit more)
Make sure you knead or mix in machine min 10 min.

You can always reduce the sugar content. I do it by about a third and no change in quality at all, just doesn't taste as sweet.
