Need help with meal ideas/mediterranean and gf

Due to health reasons I now need to revamp my diet and follow the mediterranean diet. plant based. gluten free and some foods need to be organic!!
What are some ideas for meals?
I can have eggs, white chicken and fish in limited quantities.
Fats are avocado oil or extra virgin olive oil.
I need to incorporate beans/seeds/nuts/chickpeas.
lots of leafy greens.
Fruits should be brightly colored for maximum anti-inflammatory properties.

This is a major overhaul for me and overwhelming.

Shakshuka with chickpeas, jalapeño, different colored peppers, onions, tomatoes, diced carrots. You can add any veggies that you like.

maybe you should work with a nutritionist if this is very different from how you usually eat. there are a number of cookbooks and blogs that have great recipes. I like minimalist baker, cookie and kate, vegan richa, levana's healthy cookbook, rorie's healthy cookbook.

do you like soup ( lentil, split pea, minestrone, vegetable etc) ? chia pudding? vegetarian chili, cashew cheese

I just started with the Mediterranean diet . But I’m not GF.

Firstly, you can make delicious vegetable bean soups .

I made farro for the first time yesterday and will use it as a replacement to rice .
Add to salad too.

Quinoa salad .

Breakfast for me was sautéed spinach , yellow pepper and tomatoe with olive oil and two eggs with salt and pepper (did it in the Betty Crocker but you can do in a pan)

Veggies Salad with olive oil dressing with salmon added

Salad with : greens , chickpeas , Tomatoe , cucumber , olives, feta cheese sprinkled with dressing made from
Olive oil, lemon juice, some vinegar, salt , garlic powder and lemon pepper .

Thanks for the ideas and resources! I love soup and stews so I guess I have to find recipes for that.
any other ideas for meals and recipes especially are so appreciated!

I can't have feta since I have to be dairy free as well. I am willing to do this as long as I feel better!!!
