Can I prepare schnitzel earlier in day?

I want to make it early, before my kids come home from school so I’m not busy while they need my attention. I bake it, not frying. Can I do that and keep it on 170 in the oven until we’re ready to eat?

Sure. I often make supper in the morning and leave it to cool down for a few hours in the oven

Sure- but I use mayo instead of egg

I always bread my cutlets in the morning and put into fridge and bake/fry later on.

Same. I wouldn't leave in the oven all day, though, I think it would dry out.

I say don't keep it in the oven for so long. It'll become dry.
Prep the cutlets and put it on the cooking sheet and into the fridge.
Stick them into the oven 25-30 minutes before supper.

If I’m using breadcrumbs or pretzel crumbs it won’t get soggy from sitting in the fridge all day?

It will be fine. Make sure to spray heavily with oil before baking.
