I have a very proper English lady type friend who married a Bulgarian Sefardi Israeli. Once on his travels he spied a Bulgarian Jewish cookbook in English and was thrilled. She called me in shock - 12 heads of garlic! In one dish
Most of my cooking used to be sefardi but dh has a Galitzianer kishke.
Recipes have usually been altered for the western kitchen, best to learn from the old Sefardi ladies who can put out shoshanot by themselves with one hand or never burn the bottom of the jachnun. Who make amazingly wet margarine soaked balls of dough into mellawach from scratch.They know how to use a tabun and not get burnt.
Your easiest beginning dishes are meat fish and salads. The most authentic cookbooks of Sefardi foods are those of Pascal Peretz. Maybe see if they have been translated. Her book on North African cooking is well worn by me. I also have her Iraqi cookbook.
