I bought a meat thermometer
Is it possible to make a chuck roast rare and tender
Can I cook it a long time really low but only until internal temp is about 140

Will it work
Or will it still be tough

You can reserve sear a silvertip roast or other shoulder roast. Is low but not slow.
A rolled chuck is like beef stew should be cooked longer. A hunk of chuck could possibly work.

I do this in a sous vide. Comes out delicious cook for 10 hours

I do it in a sous vide at 131 degrees for 72 hours. Comes out like prime rib. The hire the temp the more well done it will be and the less time it needs.

Will a chuck roast (rolled) bake at 250
Work
If it’s remove it from the oven at 135/140 internal temp
Or will it come out tough

I want to use it for rare-med rare roast beef

Sorry just seen this. I do at 55.6°c for 10/12 hours comes out excellent. You can do for longer though if you want..I season with salt and pepper. Once it's done quickly sear the sides in a pan. Place next to Plata on Friday night so will be warm-ish.
