Sounds like a perfect menu! Why don’t you use chicken cutlets? Chicken marsala is elegant and easy. You need thin cutlets for it

Maybe meatballs since it calls for fillers to be super moist
It is a crowd pleaser and goes nicely with rice

I was just at a wedding the other night and the main was chicken on the bone, so why not for a Sheva Brachos?
I actually liked what they did. They had the drumstick attached to the thigh, but with the thigh bones removed, so it was like a drumstick with an extended dark chicken cutlet. The entire piece was breaded. It was quite good.

that's called a chicken steak, and probably more expensive than cutlets
even though it has a bone it's considered upscale....

Can you take the thigh bone out yourself, to save money? Or do you have to pay and buy it deboned?

You can remove it yourself.
Once you get the hang of it and have a suitable knive it shouldn't take too long
