Cottage cheese pancakes - these are delicious and really healthy

1 1/2 cups rolled oats
1 1/2 cups cottage cheese
6 eggs
1/2 tsp salt
1 tsp vanilla extract
1 tsp cinnamon

Sometimes I'll add just a bit of sugar/ honey to the batter. It's very slightly naturally sweet.

Blend in blender until smooth. Cook in nonstick pan (you need to make small pancakes with this recipe - don't need to oil pan first but wipe out well between batches)

Onion Soup
Sautée tons of onions
This makes it convenient

When the onions get translucent but no color
add water to the pot with a few tablespoons of consume powder
Simmer for 15-20 minutes
Meanwhile cube up leftover old challah or bread (everyone has some in the freezer) 1-2 cups
After 20minutes pour the challah cubes into the soup shut the fire and let the bread absorb and melt into the soup
Grilled cheese
Salad

Onions 5 bags - $7 could be cheaper
Slice bread $2.49 this week at Moishas
American cheese the whole block $7 let’s say you use 1/3 extra cheezy
Dole classic salad $2.50
About $14 but could be cheaper

I just want to know where you find a pack of meat big enough for 2 adults and 3 kids for less than $10
Even in Moishas it may be $5.99 a pound but I need atleast two pounds.

Homemade pizza? The main expense there would be the cheese but I still comes out to less then $10.

In general I have this size family but realistically I spend more like 15-20 on dinners.

Meat "lasagna".
I use 1/2 lb chopped meat (at $8.99 lb).
Saute meat with onions, green pepper, tomato, zucchini.
Add 1 jar marinara sauce and mix.
Place in 9x13 pan one half a box of pasta- we prefer shells or macaroni, half the meat sauce mixture, the other half of pasta, the rest of the meat sauce.
I fill up the empty sauce jar 3/4 with water, shake to get all the remaining sauce and pour on top.
Bake covered on 350 for 1 hour.

Or do you have 3 kids under the age of 3 so it’s more like feeding 3 ppl.

Crock pot chili.
5-6 cans assorted beans (black, navy, pink, kidney, white, chickpeas, chili)
1 can petite tomatoes
1 can crushed tomatoes
1 can corn
2 onions
Celery
Salt, pepper, garlic powder, 2-4 t chili powder 2-4 t cumin
Let simmer in crockpot on low for 6-8 hours, mixing occasionally.
Serve over rice or in tacos.

I make it big so there's a variety of kinds of beans. It's probably closer to $15 but we have enough to freeze for a second supper.

It's 1/2 lb meat and a full box of pasta. And we are big eaters. But between the sauce, the veggies, it seems to fill us.

OP it’s a balancing act
Sometimes it costs closer to $15
So the next day we eat simpler and it balances out
If you buy a big bag of rice do you calculate how much of it you are using at each meal in those $10? I what about if you have a sad looking carrot that can be chopped up and put into the meal to stretch it.
The secret is not being wasteful
All leftovers need to be used or repurposed in a way that it won’t cost you more at the end.

Also it depends what your family will eat

By me there is a store that sells rotisserie chicken for $12. This I buy 2x a week and we always have extras, enough to pull off 1 lunch. Sidees are things I find in my pantry and fridge
So I know that 3 days a week I need to make things that are $8 or less
Sundays we eat Shabbos leftovers
I save the bones in the freezer for soup

This is OOT so it is possible you may find cheaper in town.

Most of these supper's are over $10. Meat is expensive nowadays. And even if you find meat for cheaper the other ingredients add up fast. Realistically I probably spend more like $20 for supper.

I love love this recipe! So good with a quick focaccia, super cheap as well!

Parve Chulent in oven (from between carpools)

Beans (cup)
Barley (1/2 bag)
Potatoes (diced)
Onion
Ketchup (1/2 cup)
Spices - I can give you exact amounts if you want
Water (5 cups-add more while cooking)

Bake in a 9x13 at 400 for 2 hours add more water and keep in oven at 225 for a few hours

This comes out very good and is very filling. you can add chicken or meat if you don’t want it to be parve.

Am I the only one who buys mixed grind? On sale all the time, it's much cheaper than chicken or regular meat. I use just under a pound for dinner, if stretched by making sauce or mini meatballs it's always enough for me, dh, and 4 small kids. Maybe equivalent to 3 adults.

I live in the us. It's a mix of chicken and meat. It's annoying to handle because it's sticky but worth it for savings/health value.

Pretty much none of these would work for a family with medical food restrictions. Guess those of us who aren't lucky enough to be able to eat just anything are stuck.
