Do you bake cakes as a profession?

If yes, please would you share your recipe and method for the cakes? I like to decorate cakes for my children’s birthdays but my cakes never come out nice and flat on top and also the sides always get over baked. What do professional cake bakers do differently?

I find the pan you bake the cake in makes a difference if the cake comes out flat

I'm not a professional but I love baking and make cakes all the time.
What are you putting in your cakes to make them rise? Could your baking soda/powder be old and not working as well? Is the cake rising at all?
I find preheating my oven makes a difference, as does not opening the oven until it's been in long enough to bake.
Also your oven might be at fault. Overcooking the sides but not cooking the middle properly can be a sign of a oven that isn't working as well. Or the temperature isn't right.
I love the chocolate cake recipe in the first BY cookbook. Haven't had it flop yet.
