Using spelt instead of regular flour

is it interchangable?

if I want to use spelt in regular recipes, wholemeal or white do I have to reduce or increase anything?

Depends with what. Its actually not so interchangeable, spelt absorbs liquid differently than regular wheat flour thus it usually is denser. So you would need to increase your liquid ratio. I find for baked goods I can get by, and or sometimes I will add a bit more liquid, to the batter and that does the trick. For challah and bread though you specifically need a recipe that calls for spelt flour. I've tried using regular wheat recipes with spelt and they just didn't work.

Now if your using it for cooking to thicken a sauce or make schnitzel than yes its interchangeable

I use white spelt. Same amounts. I do find some things it changes the texture and consistency. Anything with a flaky dough I found it changed it drastically. Regular typical cakes not at all.

The difference is that spelt has lower gluten (thus it's easier to digest).
Therefore any yeast dough would need to be adjusted because the gluten is what holds your dough together.
Spelt challos would have to be baked in a loaf pan otherwise they fall when baking.

When baking cookies you can use roughly same amount as regular

I use spelt flour for everything. In cakes and cookies I don't see a difference. In yeast recipes spelt needs less water and half the amount of time to rise. I don't specifically use recipes that are spelt and I bake my challos without loaf pans and they don't fall.
