I only know how to make one kind of chulent which is like a main dish- lots of meat and potato, a can of beans and about a cup of barley. Comes out not too liquidy (most of the time. It's not an exact science). But I'd really like to make one that's more of a side dish, meaning not so much meat, mostly barley with some potato, less or no beans and mushy. How do I do that? Any recipes and tips? I'd be using a crockpot and prefer without kishke rolls or bbq sauce.

I would try a sausage and potatoes concept.

For a 6 qt. crockpot, we use a whole bag of barley, about 1/3 bag of beans, 1 lb. of meat/bones (or can be less), 1 large onion and a few potatoes cubed. Salt, pepper, garlic powder and water filled to about 1 inch above what the ingredients come up to. Usually need to add more water after a few hours because the barley soaks it all up. Comes out "mushy" and delicious!
