What kind of pan needs to be used for standing rib roast, does it need to be the kind with a grill rack/ grate.

No. I use a regular 9x13 or larger roaster pan if it’s really big

He doesn’t say what kind of pan. Using a 9x13 because thats all I have

I do a deep 9x13 but put balls of silver foil on bottom so the roast isn’t sitting all the way at the bottom of the pan

I was advised by a butcher to make a rub with olive oil and lots of herbs and spices, rub all over roast, turn oven to 500 for first half hour to make a nice crust on the outside, then lower to 250 and slow cook for a couple more hours, depending on size.
