What or how can I learn if totally clueless and don't have so much time to devote to learning. Need the clearest, most simplified hands on instruction.

Do you already have a starter? If not, google the King Arthur flour method. It can take a few weeks to develop a starter, so you have to be patient.
If you already have an active starter, I find this recipe easy to make.
Invest in a kitchen scale, if you don't have one. They're relatively inexpensive.

500 gr Bread flour
310 gr Water
120 gr Starter
10 gr Salt

1. Mix all ingredients and allow a 60 minute autolyse.

2. Then 4 sets of stretch and folds every 20 minutes.

3. Then allow to bulk ferment on countertop 6 hours.

4. Shape and place in a banneton.

5. Place the dough in refrigerator and leave for up to 36 hours. (12 hours is fine.)

5. Preheat Dutch oven at 530 degrees.

6. Place Dutch oven into oven and turn temperature down to then upon returning the pot to the oven, turned the oven down to 450 degrees.

7. Bake 25 minutes with lid on, then 15 minutes with lid off.

Makes 1 loaf.

There were some threads about it in the past. Here's one.
I bake my own sourdough bread with a simple no-knead method once a week and find it very rewarding.

But: keep in mind that Pesach is around the corner - breeding a fully active sourdough starter from scratch takes about two weeks, and keeping it over Pesach is a bit of a problem, it is chametz gamur. I'll throw mine out and start over again after Pesach. Though in case of urgent need one could probably ask a shayla about selling.

I’ve been saying for years I am going to learn how to make my own sourdough.
3 months ago I said this is it!
I sat on YouTube and Google for days on end and I taught myself! I am a proud peacock, my bread comes out nicer and tastier than the ones we have purchased from other and I can’t believe how easy it is!
It’s time consuming but not hard at all!
There are so many free content online you just need some time and patience. It took me over 2 weeks to get my starter right, the day it passed the float test I felt like I was in labor until my first loaf came out and I officially gave birth to my first sourdough baby!

This.
My husband learnt this method and my goodness, he makes me delicious sour dough with minimal effort in different flavors.

If you have any questions, ask away...
