Vegetables or something good for an appetizer

We are having a lot of people.

Is it a huge patchke?
Needs a ton of time ?

I sauté cabbage and shredded carrots to fill the noodles/crepes. I’m sure you can use any combo of sautéed vegetables.

I make the crepes before Yom tov and fill the day of with wtvr leftovers (meat chicken veggies)we have and mashed potatoes as a base. I also make a sauce with onions, mushrooms, etc and leftovers like meat/chicken/veggies etc.

Their yum! Always a hit

Use noami nachmans recipe for no flip crepes with coleslaw mix filling. I freeze ready filled and then fry after I've defrosted them

Sauté an onion in 2 Tbsp oil with half a teaspoon salt and half a teaspoon sugar for 15 minutes
While it’s on the stove mix a bag of coleslaw mix with 2 teaspoons salt and let it sit so it wilts.
Add the coleslaw mix to the onion, mix well, sauté another 10 minutes. Add some grated fresh ginger or a frozen ginger cube and ground black pepper or hot pepper flakes to taste. If you add 1/2 lb pastrami your family will love you.
Fill crepes. They freeze well but put parchment paper between filled crepes so they don’t stick together. Defrost before using. Best to reheat right before serving by frying in a very thin layer of hot oil until crisp outside, but you can just put in a hot oven or on plata.
