I soaked the cholent mix beans overnight.
Now I realize I only need half of that.
Is there any way to save the other half of the beans for the next week or something?

I had that 2 weeks ago. I drained it, put it in a small pan, covered it and put it into the fridge. It was perfect last week.

Freeze them.
If you are up to it you may boil them in unsalted water and freeze them when they are cold.
I make batches if beans. Boil and package in small bags and freeze. Each week defrost what I need.

So I should take my soaked beans and boil them? And then when they get cold I should freeze them?

There's no need to boil them once they're soaked. It will get too soft. Just rinse them well & freeze when dry.
