I get the plastic hard sheets (not sure what it's called) from the hardware store.
Last year I got the wider ones and used it to cover the backslash as well, since the narrow ones were 1/2 inch to short.

I use the same. It's like a corrugated plastic. Well priced and I throw it out after Yom tov as they are not expensive. Easy to work with you just place on your counters and tape into place.
