It's very simple. First make sure it's clean. Then fill a cup with water and zap until it boils and fills the microwave with steam. Then move the cup and repeat so that the spot it was in before gets kashered as well. Be careful if you use a plastic disposable cup - it will melt. Have towels or paper towels handy to sop up the excess water, but be careful because it will be boiling hot.

In terms of defrosting food in the microwave, most microwaves actually have a defrost option where you put food in at a lower power so it defrosts rather than cooks.

I know you probably already went on your trip, but for fellow travellers within their own country: we had meat vaccumed packed at our buther. It travells well when kept cool. Salsa and corn chips are great to have cuz of the sorta veggie componant.

you should really ask your local rabbi, most people do not hold of kashering a microwave, but either way in a treife microwave as long as the food is double wrapped and sealed well, it's fine to heat it that way.
