I’m making pastrami-potato stuffed capons and the recipe says to top the filling with a small piece of kishka before rolling the capons. What could I use instead of kishka that would give a similar effect/texture?

Is using KLP kishke an option for you? It's not the best but it's ok.

I've made my own KLP kishke. It's not difficult, and cookbooks have tons of recipes.

Great I found a recipe online, didn’t realize I could do that. Thank you!

Just use a limited pastrami’s and a little more mashed potatoes. It will be absolutely perfect and delicious!

(That is how I would make it anyway as I don’t eat kishka.)
