Pesach VEGAN L'Chaim!!

Our son got engaged and will be home for Pesach. He and his fiancee are Vegans! We are Ashkenazim. What do you suggest (vegan pesachdik festive snacks) for the L'Chaim for 25 people that I am planning to be held on one evening during chol hamoed?

Fruit, nuts, chocolate. 1/2 moon jellies and French fries.?

Cauliflower crust pizza with cashew cheese?
Mean you ask the young couple for some menu ideas?

Great ideas! I already bought tons of Terra Chips for Pesach! And whatever candy Costco had for Pesach.

Various platter of chocolates, nuts, and fruit. Many salads including some that are more substantial like quinoa and/or with roasted yams and nuts.

Do you need hot sit down food?

Thanks. I think hot sit down food is more than I'll be able to handle. Not a meal, but just pick ups. I bought a mini-muffin pan and paper liners and will bake those Pesach cake mixes without egg (yes you can!) and drizzle on glaze.

Does this seem like "enough" for a casual two hour Lchaim? I'd welcome feedback, even criticism!

Crudites w ranch dressing
Candies: jelly rings, chocolate almonds, chocolate apricots
Nuts
Fruit, fresh
Fruit, dried
Candy: jelly rings, chocolate almonds, chocolate dipped apricots
Crudite platter and fake Ranch dressing
Terra chips
Spreads w matza: Fake Chopped Liver, Guacamole, Matbucha
Tiny plastic cups: Moroccan Carrot Salad, Beet apple salad, Marinated Mushrooms
Mini muffins from Pesach mixes w glaze and raspberry decoration
Prosecco plastic flutes, lemonade

Things to put in individual cups:

sorbet
fresh fruit, assorted (each in own cup)
crudites with oil-based dressing (no mayo!)
vegetable soup

Also, does everything have to be vegan? Are all 25 people coming vegan too?

For the non-vegans, have pesach cake/macaroons.

Everyone will understand bc it's pesach...

Thanks. Out of respect for the chasson and kallah I want it to be vegan though the other guests are not. Arguably, the other guests can go home for fleishik after the party!

I would skip spreads with matza.
Most people don't wash at a lechaim/vort

Mazel tov! May they build a bayis neeman b'Yisrael with you cheering them on till 120!
Fruit cups/platters, vegetables, dips, along with the nosh.
Deconstructed salads, I.e. all the components lined up next to each other on a platter or shallow bowl, boards...you can have a lot of fun with this!
