Pesach Cole Slaw
3 kolarabi
1 small carrot
homemade mayonnaise (recipe below)
lemon juice
sugar
salt (optional)
Peel kolarabi and carrots. Shred in food processor.
Mix to taste with mayo, lemon juice, sugar and salt.
Homemade Mayonnaise
2 whole eggs
1 tsp sugar
1/2 tsp kosher salt
2 Tbsp lemon juice
2 cups oil
Beat or blend the 2 eggs very well in food processor, mixer or blender.
Add the sugar and salt.
Continue beating.
Add 2 Tbsp lemon juice.
Continue beating.
Make sure eggs are blended really well.
In a slow and steady stream (I mean realllllllly slow - should take 10 - 12 minutes), drip the 2 cups of oil into the beating eggs.
The best way to do this is to use a food processor. Make a tiny hole on the bottom of a plastic cup. Place it into the opening of the processor while the processor is running and beating the eggs. Allow the oil to drip slowly into the well beaten eggs. This should take 10 - 12 minutes.
Makes 2 cups.

There's a way easier method for making mayo. Using a 32 9z round container put the eggs and spices. Then add the oil. Then take an immersion blender and starting from the bottom, blend, slowly working your way up to the top as it thickens. Takes seconds!! No more holes in a cup for 20 min!! Life changing.
