We’re traveling to my in-laws for the second days, a two day road trip. We’re planning to stop at a hotel overnight. I need ideas of dinner I can bring along, something I can cook in advance. My family loves potatoes, which is greaf for Pesach, but I know potatoes can’t really be frozen.
We will probably take along either a burner or Betty Crocker to warm up food. I would love to serve a filling meal, but I don’t want to bring along too many things.
Any ideas?

Deli sandwiches on matzah
Hot dogs/cutlets/burger on George Forman

Bring fresh potato salad and keep it chilled.
Freeze potato kugel or latkes and rewarm in hotel. Mashed potatoes or doughless knishes can work, as can blintzes.
You can also bring packaged frozen French fries and heat fresh.

I’d just keep it cold foods. Schnitzel, roast chicken, cold cuts.

Thank you. I do want to serve something warm. Road trips are so exhausting, I think a warm meal will really be what we need. Any ideas of a stew I can make? Or one pan dinners for Pesach?

Chicken paprikash
Onion rounds. Peeled and cut up carrots celery and pototoes. Chicken bottoms places on top. Salt pepper garlic and lots and lots of paprika water covered. Cook for 1.5-2 hours. Till fully cooked and looks soft and ready.
You can easily transfer this to a pan and reheat on hot plate. Test out the recipe this week to be sure your fam liked.

Sounds delicious, but what happens to the potatoes if I freeze them?

Roast or chicken in sauce. Freezes and rewarms very well.
Potato blintzes or knishes.
Sweet potato, butternut squash, or squash kugel.
Soups
Letcho. Just scramble in eggs in a Betty.

Foods you can freeze
Potato/liver/chicken-veggie blintzes
Apple kugel (can also be eaten cold)
Compote
Shepherd pie
Browned minced meat- eat with Matzo or in an egg crepe
Glazed carrots with pineapple
If you bring Betty crocker you can take along a few raw potatoes and slice it and place on Betty for fresh chips. If you take a burner, you can cook the potatoes in a disposable pot.
If you bring a burner you can warm up frozen soup in a disposable pan. Or in a bekele on a hot plate.
