Has anyone been successful subbing oil with something else (not sure what) in recipes?

We do use sugar, cocoa, coffee and potato starch but no oil.
No other processed ingredients.

Any pesach "cookies" that don't need oil?

Almond Cookies
1 cup sugar
2 eggs
3 cups ground almonds

Whisk together the sugar and eggs. Add the almonds and mix until well combined. If needed, place in freezer for 30 minutes to make batter easier to handle.
Form into 1” balls. Arrange on 2 cookie sheets.
Bake in oven preheated to 350 for 12-15 minutes.
Cool completely before removing from pan.

Meringue Cookies
3 egg whites
1 cup sugar
1 cup chocolate chips

Preheat over to 250 degrees F. Beat egg whites until they hold their shape but are still soft. Gradually add sugar and beat until stiff. Fold in chocolate chips. Spoon onto foil lined cookie sheet. Bake for 1 hour.

(Variation: Eliminate chocolate chips, make larger cookies and use small glass to make medium-sized indentation in meringues before baking. You will now have meringue shells to fill with sorbet, mousse or fresh fruit for a "fancy" dessert.)

I haven't tried the below recipes, but they were once written up in a magazine.

Pesach Cake
8 eggs, separated
1 cup sugar
1 cup ground almonds

Beat egg whites in large bowl until frothy; continue beating while adding sugar very slowly to the whites, and beat until peaks form.
Fold in flour of the reserved egg yolks (reserve the others for another use), then the ground almonds.
Bake at 350 for about 40 minutes.

Pesach Muffins
8 eggs, separated
1 cup sugar
1 cup ground walnuts
3 large bananas, mashed

Use same directions as above. Bake in muffin tins until toothpick inserted in centers comes out clean.

you can also bake them in a pan like cookie bars. sub shredded coconut for some of the nuts and/or add some chocolate chips for fun.

you can also use pecans or hazelnuts or whatever other ground nuts you like instead of the almonds. but don;t use all walnuts, they'll be bitter.
