If you use vinegar I/o lemon juice it stays fresher for a longer time.
Store in coldest part of fridge!

I use lemon juice-
1 egg
1 yolk
2 tbsp lemon juice
2 cups of oil poured in very, very slowly
Salt and pepper
Use food processor- drizzle in oil last while everything else is being mixed
I triple the recipe

I found that freezing the oil for an hour first helps it not get botched.
Don’t have my recipe out yet.

It never gets botched
I usually make a slit at the end of a plastic cup and let the oil pour in slowly while machine is going
