Any good suggestions for a good soup, preferably with meat or something a bit upgraded?

Saute onions, add cut zucchini, a bunch of mushrooms and a handful of dill. You can throw in some cauliflower if you like. Cover with boiling water, bring to a boil and then simmer for 20 minutes. Blend with an immersion blender. Add salt, pepper, and anything other spice you like. You can add chunks of leftover chicken or meat at this stage and heat.
No measurements on this one, it's a seat of the pants kind of recipe, but it always comes out.

There are some delicious stews that use meat plus root vegetables. They are pretty classic and generally don't need any kind of modification.

Creamy Tomato Soup with Chicken
1 large Spanish onion, diced
2 tablespoons oil
2 cloves garlic, minced or 2 cubes Gefen Frozen Garlic
6 large ripe beef tomatoes (about 3 pounds/1.36 kilograms), peeled and diced
2 small zucchinis, peeled and diced
3 stalks celery, diced
2 cups water
2 and 1/2 cups chicken soup, such as Manischewitz Chicken Broth
6 chicken drumsticks with skin, cleaned
1 pound (450 grams) marrow or beef neck bones
10 ounces (280 grams) shredded carrots (about 2 and 1/2 cups)
2 teaspoons sugar
1 tablespoon salt
black pepper, to taste
Directions
In a large pot, sauté onion in oil until soft, about 10–15 minutes. Add garlic and sauté another three to five minutes until fragrant. Add tomatoes, zucchini, celery, water, and chicken soup. Bring to a boil and lower heat. Simmer for 30–40 minutes or until vegetables are soft. Blend with an immersion blender until soft and creamy.
Add chicken drumsticks, marrow bones, shredded carrots, sugar, and spices and bring to a boil again. Lower heat and cook for one and a half to two hours.
Remove marrow bones and discard. Remove drumsticks and cut the chicken from the bones, shredding into bite-sized pieces. Return chicken to soup and serve.

Sautee an onion or 2, fill pot with water, add peeled and cubed zucchini, 2 peeled and cubed potatoes, a peeled and sliced parsnip or 2. In a mesh bag add 4 chicken breasts and a bunch of fresh parsley if you like. Salt and pepper. Cook until the veggies are soft and chicken is shreddable. Remove chicken and fresh parsley, blend with immersion blender, shred chicken and add back in.
The only thing to be mindful of is amt of veggies to water because you don't want the soup too thick or too thin once it's blended.

Sauté first a big onion, then add 4 carrots , 1 sweet potato, 2 squash peeled and 2 squash not peeled, 3 petritschke sauté for an other few min. Add in 2 separate net bag , 1 pkg flanken and 1 pkg marrow bones. Add spices, and water. Cook for 3.5 hours. When done take out the bags blend the soup. The bones throw away and the flanken shred to little pieces and put back in soup. Hearty appetite.
