How could I make a good kugel without a regular oven? I have a convection oven that I used last year. The results weren't great.

Doesn’t your convection oven have a regular bake option? I’ve made many kugels in a convection oven with no difference from a regular oven.

U may be right. I will try that. I don't know why I used the convection setting. Think I could do 1 on each shelf? It has 2.

I always do my kugel in a betty crocker, year round, my family prefers it like that.

4 Idaho Potatoes
Half Cup Oil
Splash of Seltzer
4 Eggs
tsp Salt
Pepper

Prepare as you would regular kugel, Line the betty with parchment paper coming up the sides, spray with oil, and let it cook for 40 minutes. Uncover right away so it stays crispy. Yummy!

My Betty Crocker cooks evenly on both sides. I do this pesach or in a pan or in the crockpot. Different results for each one.

They won't cook through/brown properly if you do 2 at a time, on each shelf.
Do one at at time on the bake setting, and watch careful and adjust settings as needed.
