Open only, otherwise it's going to be soggy.

Uncovered. Otherwise wouldn't it be soggy?

Spray pan and top of breaded cutlets with oil spray.
Cover loosely with a sheet of parchment paper
Flip over halfway through baking
Uncover last five minutes

I bake it covered to retain the juiciness. Otherwise, it's dry and chewy. We don't mind the slightly soggy breading but if I want it crispy I uncover it for the last 10 minutes.

If you cover loosely with parchment paper it won’t get soggy but won’t dry out. Uncover last few minutes to make the coating crispy.

I bake covered for 20 minutes then broil uncovered for 5 minutes.
It’s the perfect formula to get soft juicy inside and crispy outside.

I did it now 15 min covered and then 15-20 min uncovered and it came out good.

20 min covered and 5 min uncovered didnt work for me.
