I am having guests first night of Shavuos and need ideas for an *easy* yom tov main.
Shana Rishona here and so far I never really made meat that actually came out good (except in the crockpot)
So either SUPER SIMPLE meat recipe ideas, or crockpot meat (but fancy enough for yom tov), or other ideas...

Any roast that cooks low and slow, then sliced thinly. Low and slow is fail proof especially for YT
Two equipments that are worth investing
1. A digital meat thermometer
2. A meat slicer

Garlicy Brisket
3-4 lb brisket (I like 2nd cut)
Salt
Pepper
1/2 cup olive oil, split into 2 1/4 cup
3 onions sliced in 1/2 moons
1.5 cups chicken stock
1.5 cups sweet red wine (something tasty you would drink)
3 TBLSP Brown Sugar
30 Garlic Cloves
Preheat oven to 325
Pat the brisket dry
Season the brisket
In 1/4 cup olive oil (I use less) sear the meat 4 minutes on each side.
Transfer to a plate
Add the other 1/4 cup (I use less) and caramelize the onions
To the onions add broth, wine, brown sugar
Deglaze
Pour the onion mix into a baking dish
Place brisket on top
Sprinkle all the garlic on top
Bake for 3.5 hrs

******EXTREMELY IMPORTANT *****
Let brisket rest over night in the refrigerator (at least 8-10 hrs)
Then slice against the grain

This one is compact, BUT if you have room to store it there are cheaper ones.

Another nice main (if I have a lot of people I’ll make 2 mains) is skewered baby chicken. You could make your own, but for YT I buy them already skewered and seasoned.
I serve it with couscous and stringbeans
