You could add some sautéed mushrooms if you wanted - not sure if this is what you are looking for as it is more like a rustless quiche

Spinach Pie
MAKES 8 TO 10 SERVINGS
Vegetable oil spray
8 large eggs
¾ cup milk
⅓ cup (1 ounce) grated Asiago
¾ teaspoon freshly ground black pepper
½ teaspoon kosher salt
3 garlic cloves, minced
1 16-ounce package frozen chopped spinach, thawed and well drained
¾ cup cottage cheese
½ cup chopped roasted red peppers, well drained
Heat the oven to 350°F. Lightly coat a 9-inch round deep pie dish with vegetable oil spray.
In a bowl, whisk the eggs, milk, Asiago, black pepper, salt, and garlic until blended, about 1 minute. Add the spinach, cottage cheese, and roasted red peppers and mix until combined. Pour the mixture into the prepared pie dish. Bake for 60 to 65 minutes, until the filling is set and golden brown on the edges. Let rest 5 minutes before cutting into wedges and serving.
