What do you mean by diet? Low fat, or keto? (There are a lot of keto cheesecake recipes with cream cheese and monkfruit.)

I tried to create my own recipe using stevia as a sweetener, so I looked at a bunch of different cheesecake recipes. It seems to be that for every 8 oz of cheese (whichever type you want to use-cream cheese, farmer cheese, anything else) you add one egg, a half a cup of sweetener / sugar, some vanilla, and some baking powder. Some recipes call for flour, but I just skipped it. My cheesecake came out fine.

I sub xylitol for sugar in my standard recipe and no one can tell. I cut down on the amount some too.
