I make it without soup mix, but do use half cup inexpensive wine (even though I usually don't like wine in cooking).
You can make your own thing with meat drippings from a previous dish.

tons of carmelized onions, can add a little miso, beer or apple cider for more depth of flavor

DH makes a delicious onion soup. The trick is to use a variety of onions and saute for a while for maximum flavor. He also add herbs (dried) like thyme or tarragon and a good amount of salt to bring out the flavor.

I sauté the onions for a very long time and add two bay leaves with the spices (salt, pepper, garlic powder).
