my hub loves this for friday night when its still warm

4 zuchinis cleaned and sliced about 1.5" thick

fry onions, add zuchini, one can tomato sauce, one can tomato paste, oregeno, onion, garlic, peper, and salt, sautte until tender, serve warm

At the request of a member, I'm writing to let you know that I didn't make anything with zucchini for Shabbos. embarrassed I didn't have enough for the kugel and my husband doesn't like cooked vegetables for Shabbos. I did, however, make the stir-fried zucchini for supper tonight and it was a huge hit! Thanks, mommy2! (and all the others who posted recipes for me.)

I make this easy and delicious dish. Slice a zuch in coins, slice an onion and a red pepper. Saute these and add a jar of your fave salsa.

Also with six zuch slice them in half, core out the center and stuff with your meat ball recipe adding some long grain rice.
pout a pasta sauce and a cup of water over it. Cover and bake for two hours at 350.

I have a very low fat zucchini. kugel recipe

Approx. 12 nice sized zucchinis
1 large onion
1 large egg
1 tbsp fat free mayo
1/2-1 lb slice mushrooms (more or less depending on preference)
salt and pepper


steam zucchini in a pot of lightly salted water until zucchini is very soft.
While it is steaming, finely dice onion and microwave for 2 minutes (this softens the onion and releases some of the juices.) Then sautee onion and mushrooms in cooking spray. When zucchini is done, press out as much liquid as possible. Mix in with onions and mushrooms and cook until liquid is all gone. Remove from heat and add mayo, egg and salt and pepper to taste. Mix well. Zucchini may be partially mashed, and some in large chunks still. Pour into a prepared 9x13 pan and bake at 350 for about an hour or until top turns dark and looks "finished".
This is a very healthy kugel, a nice change from sweet zucchini kugel, and is great for vegetable lovers. The friend who I got this from said it is only 1 weight watchers point for the whole kugel. My kids also go crazy for this.

sorry it took so long-just found the recipe today!

zukini fudge cake:

4 eggs
2 1/4 cups sugar
2 tsp vanilla
3/4 cup marg
1/2 cup cocoa
2 tsp baking powder
3/4 tsp salt
1 cup buttermilk ( I use 1 tblsp vinegar in cup, then add soymilk to = 1 cup)
3 cups coarsly shredded unpeeled zukini
1 cup chopped walnuts (optional- I dont use)

beat eggs till fluffy, add sugar beating till mixture is thick and lemon colored. beat in vanilla and marg. combinedry stuff, add alternately w/ milk. beat till smooth. fold in zukini and nuts. pour into 4 greased and floured round tins (8 or 9 inch). bake 350 25-30 min or till top springs back when gently pressed.
frost btw layers, on top and sides

frosting:
1 cup marg softened
2 lbs conf sugar
1/2 cup cocoa
1 tblsp vanilla
1/2 cup milk (soymilk)

beat all till creamy.

healthy? I doubt it. good? yup
