Someone asked for the recipe for quinoa pilaf too, but all you do is follow the recipe for quinoa with shredded vegetables and omit the veggies! In other words cook about 1/2 C quinoa in 1 C broth or water along with a little fried onion for about 15-20 minutes. But while we're at it, here's my recipe for quinoa bread!

This is designed for the bread machine, but if you prefer take it out of the machine after letting it rise, rise again in a loaf pan, and bake at 350* for maybe 40 minutes:

1/2 C water
3 eggs
3 T oil
1 1/2 tsp vanilla
3/4 C walnuts
3/4 tsp salt
3/4 tsp cloves
1 1/2 tsp cinnamon
3/4 C brown sugar
1 1/8 C cooked quinoa
2 1/4 C flour
2 1/4 tsp (one pack) dried yeast

Since this has so much sugar, it definitely benefits from extra rising time or special yeasts designed for sweet breads.

make sure you soak the quinoa about 15 mins. This removes the saponins that coat the "grain".

Any recipe that uses onions and other sweet veggies is good.

We eat it with tuna and spaghetti sauce. But my dd likes it with ketchup and tuna.

I like it with feta cheese too.

From the January 2006 issue of Eating Well:

Quinoa with Latin Flavors
1 C quinoa
2 tsp oil
1 med onion, chopped
1 4 oz can chopped green chiles
2 minced garlic cloves
1 14 oz can chicken or vegetable broth
1/2 C toasted pepitas (pumpkin seeds)
2/3 C coarsely chopped fresh cilantro
1/2 C chopped scallions
2 T lime juice
1/4 tsp salt

Toast quinoa in a large dry skillet over medium heat, stirring often, 3-5 minutes til crackling and aromatic. Transfer to colander or seive and rinse well.
Heat oil over medium heat. Cook onion 2-3 min til softened. Add chiles and garlic, cook 30 seconds more. Add quinoa and broth, bring to a boil, reduce heat and simmer 20-25 minutes til most of the liquid is absorbed. Add all other ingredients, mix gently, fluff with a fork and serve.
